Mighties™ Kiwi Oatmeal

Directions

  1. Kiwi Oatmeal:
Pour water in medium saucepan set over medium-high heat; bring to a boil. Stir in coconut milk. When mixture comes to a simmer, stir in oats and salt.
  2. Reduce heat to low. Cook, stirring occasionally, for 12 to 18 minutes or until tender and the consistency you like. Let stand covered, for 2 minutes.
  3. Stir in brown sugar and cinnamon. Chop 2 kiwis and stir in. Divide among 4 serving dishes. Slice remaining kiwi. Garnish with kiwi slices and Almond Crunch Topping.
  4. Almond Crunch Topping: 
Stir almonds with coconut, brown sugar and melted butter until combined.
