Mango Mighties™ Kiwi Salad with Chicken Satay Skewers

Directions

  1. Soak twelve 8-inch bamboo skewers in water for 30 minutes. Toss together chicken, garlic, soy sauce, oil, peanut butter, honey, lime juice, fish sauce and pepper; let stand for 30 minutes. Thread chicken evenly onto skewers.
  2. Preheat grill to medium-high heat; grease grate well. Grill skewers for 4 to 6 minutes per side or until chicken is cooked through.
  3. Mango Kiwi Salad: Meanwhile, toss together kiwis, mango, shallot, oil, lime juice, sugar, fish sauce, and sriracha (if using). Stir in mint.
  4. Just before serving, toss lettuce with kiwi mixture; divide salad among four plates. Garnish with cashews. Top with chicken skewers.

Substitute shrimp or pork tenderloin for chicken if desired.

These Asian flavors of the satays pair well with the freshness of the mango kiwi salad for an exotic taste experience.
