Spinach Salad with Mighties™ Kiwi Vinaigrette

Directions

  1. Kiwi Vinaigrette: In bowl, whisk together mashed kiwi, clementine juice, balsamic vinegar, shallot, honey, mustard, salt and pepper. Slowly drizzle in olive oil while whisking to form the vinaigrette.
  2. Salad: Toss spinach with 1/3 cup of dressing, kiwis, bacon and pumpkin seeds until combined. Garnish with eggs if desired.

Tip: Store dressing in refrigerator for up to 3 days.
